A Taste of Summer!

Smores Bars Recipe

These long winter days have a way of making my mind drift to thoughts of sweet summer nights…and s’mores!!  Nothing is better than kneeling beside a glowing campfire and roasting a perfectly golden marshmallow.  Ooey gooey and Oh So Good!  I’ve come up with a solution to the Winter Blues with this feel good recipe that you and yours will love!

S’mores Bars


1 bag marshmallows (10 oz)

6 cups Golden Grahams

3 Tablespoons butter

1/2 cup chocolate chips

Step 1:

Measure out the golden grahams and put in a large mixing bowl…big enough to stir lots of sticky cereal!  Spray a rectangular cake pan with cooking spray and set aside.

Step 2:

Melt the butter in a large saucepan on LOW heat.  Add marshmallows and stir continuously until there are no lumps left.

Step 3:

Pour the melted marshmallows over the cereal and quickly stir until all pieces are covered.  TIP – Spray the back of a clean spoon with cooking spray to spread out the cereal mixture with ease!

Be the coolest parent and leave some marshmallow-y cereal in the bowl for the kids (or yourself) to snack on!!

Step 4:

Put 1/2 cup chocolate chips in microwave safe bowl and microwave for 30 second intervals, stirring after each time.  It took me 1 to 1 1/2 minutes to be liquid.  Stirring will melt the little lumps.

Step 5:

If you have a fancy frosting bag and tip, go ahead and get those out.  At camp we often have to improvise, so if you are like us, get out a small ziplock bag and a scissors!  Cut off the corner of the bag and scoop your melted chocolate inside.  Twist the top of the bag to get the air out and squeeze the chocolate over the bars.  You can do squiggly lines, zig zags, or whatever floats your boat!  Since I was thinking summer, I went with the Camp Birch Knoll sun!!

Step 6:

Let them rest for a bit, cut into squares, and enjoy!!
